This position will be permanently based at The Evergreens Foundation Head Office in Hinton, Alberta, which is also known as a ‘Gateway to the Canadian Rockies’ and offers a wide variety of recreational opportunities. ABOUT THE ROLE

We are currently seeking a Regional Executive Chef who is looking to foster a positive kitchen atmosphere and ensure the Lodges are providing quality food in a cost-effective manner in compliance with applicable regulations. This role directly reports to the foundation's Chief Operating Officer (COO).

Main Duties:

  • Develop and implement seasonal menus that meet dietician approval.
  • Prior to implementing a new menu, create a recipe book, and meet with kitchen team members at each lodge to review menu and arrange a food tasting session.
  • Execute the menu by training kitchen team members on the basic cooking techniques.
  • Create special menus for special events in conjunction with management at each lodge.
  • Develop weekly inventory order sheets.
  • Develop a tracking system for annual food inventory requirements.
  • Forecast food and culinary equipment costs, and manage and maintain budget.
  • Maintain updated and accurate costing on all dishes.
  • Discuss daily, weekly, and monthly food costs with management and COO.
  • Identify the developmental needs of kitchen employees and provide coaching, mentoring and helps them improve their knowledge or skills.
  • Train, develop and motivate kitchen employees to meet and exceed established food preparation standards on a consistent basis.
  • Develop kitchen training manual and training checklists.
  • Responsible for creating, maintaining and communicating culinary purchasing guide, and developing relationships with culinary suppliers.
  • Responsible for food quality control.
  • Ensure industry regulatory and health code standards are being met.
  • Ensure policies and procedures in accordance with foundation standards are being met.
  • Ensure kitchen equipment is properly cleaned, maintained and in good working order.
  • Direct support to all kitchen team members at each lodge.
  • Display exceptional leadership by providing a positive work environment.
  • Attend weekly meetings when on site at lodges.
  • Interact with residents to obtain feedback on food quality, presentation and service levels.
  • Identify any problems that arise in the kitchen and address with management and COO.
  • Visit Lodges once per month. May require spending weeks at a time per lodge.
  • Travel will be required; company vehicle will be provided.

WHAT WE ARE LOOKING FOR/QUALIFICATIONS

  • Have 3 to 5 years of culinary and supervisory experience is required.
  • Post-secondary diploma or certificate in a culinary-related field.
  • A minimum of 5 years of volume food preparation and kitchen management experience.
  • Certificed trainer to teach Food Safe is an asset.
  • Strong leadership and communication skills.
  • Have highly developed time management, organizational and interpersonal skills.
  • Have excellent computer skills.
  • Ability to maintain patient and tactful composure in a fast-paced environment, and when dealing with residents, family members, visitors and fellow employees.
  • Be comfortable working in a fast-paced environment.
